Since I'm not going to get to participate in the SS this time, I thought I'd go ahead and ask. My mom and brother have started school, mom works at the school, and I'm working all day, mom and I are looking for recipes that we can make some lunches/dinners in the slow cooker.

There is no time to get anything going because we are working, and this would be the easiest thing. My bro is super picky so that is something we have to consider. If any of you have some goodies to pass on to me, I would be very greatful!! I don't want sandwiches every day for the rest of the school year, and eating out all the time isn't cheap!

I love my slow cooker and use quite often even though I am home all day. Here are a few of my basic recipes that are quick and easy to throw together.

Spaghetti Sauce
2 cans tomato sauce
1 can diced tomatoes with basil, garlic, and oregano
1 small can tomato paste with basil, garlic, and oregano
1 lb. hamburger meat
1 small onion, chopped

Brown hamburger meat and onion together, drain. Mix all cans together in slow cooker, add hamburger meat, and cover. Cook on low all day. If its too thick I usually add a little water to thin it out to the consistency I want. Serve over noodes w/ a salad and garlic bread.

BBQ Chicken Sandwiches
4-6 boneless, skinless chicken breasts
1 bottle of your favorite bbq sauce
1 chopped onion, optional

Place chicken in bottom of slow cooker, cover with onions (again optional), and pour the entire of bbq sauce on top. Cover and cook on low all day. Before serving shred the chicken breast and serve on buns with sauce.

Super Easy Roast
1 roast, any cut will do
1 onion, chopped
1 package ranch dressing mix
1 package beef gravy mix
1 package Italian dressing mix
1 cup of water
baby carrots

Place roast in bottom of slow cooker with carrots and onions. In a seperate bowl mix the packets together with 1 cup of water. Pour mixture over roast, cover, and cook on low all day. Serve with mash potatoes and warm biscuits.

I haven't had too much luck getting crock-pot food to turn out well.

About the only thing I have is buying a big beef or pork roast, dumping BBQ sauce on it, and letting it sit for a long time.

Cornbeef and cabbage didn't turn out too bad either.

All kinds of soups and stews are great in slow cookers. Just make sure you add enough liquid and put on slow if you'll be gone more than 8 - 10 hours or so. is enough liquid for the amount of time. I had done a roast once but ended up not adding enough moisture and much of it cooked out. I added water and made gravy anyway and it was fine but a little dry. ugh>

I plan on making a 15 bean soup this week. Since I do work, it makes coming home to dinner so nice. No rushing and eating at 7:30 or 8 pm. I'll follow the direction on the bean mix.

Something a friend taught me is a Day after Thanksgiving stew. You dump turkey, dressing, gravy, veggies, almost anything you want into a slow cooker on low for 8 - 10 hours. It's wonderful and so easy!

There are also a number of cook books for slow cookers you may want to check out.

I usually cook a chicken, one sliced onion and a couple cut up celery stalks in a can of chicken broth one day, remove the chicken and debone it that evening, cool the broth by putting it in the fridge over night and removing the fat the next morning.

Then put the chicken, any and all veggies you like (carrots, celery, beans- green, black or cannelli (sp?), corn, cauliflower etc), maybe a can of tomatoes, more onions, rice or noodles (if using noodles wait until shortly before service to put them in), spices (salt/pepper, sometimes some chili powder, garlic, whatever) back in the crockpot the next morning and you have very good soup to come home to.

sometimes when I have few ingredients I do something very simple...like either a little beef roast or the cut up beef you use for stew and I just put a can of cream of mushroom soup in. And by the end of the day the soup and the broth make a gravy and then I serve it with either noodles or rice.

Another real simple one is I'll get a little pork roast and pour salsa over it and let it cook all day. Then when I get home I shred up the pork and just let it simmer another 1/2 hour or so and then serve it with soft flour or corn tortillas.

I'm not sure I have a recipe but I love chicken soup in the crock pot!!

I get a cooked chicken from the grocery store and we have that for supper then I pick off all the rest of the chicken (you just need cooked chicken, you could use anything) and then I cut up carrots, celery, a leek, bok choy, cabbage, broccoli, cauliflower, and any other veggie I have, put it in the crock pot with the chicken, fill 2/3 with low sodium broth and 1/3 with water (I use a little more broth because I like how it tastes but you can experiment), add a couple bay leaves and whatever other spices I'm in the mood for.. basil.. soup spice, whatever and let it cook on high for a few hours, its the easiest thing ever!!

STICKY CHICKEN

(note: this comes out similar to Boston Market rotisserie chicken in both flavor and texture)

2 tsp salt
1 tsp paprika
3/4 tsp cayenne
1/2 tsp onion powder
1/2 tsp thyme
1/2 tsp white pepper
1/4 tsp garlic powder
1/4 tsp black pepper

Rinse chicken and drain. Rub spice mixture over inside and outside of chicken. Seal in a plastic bag and refrigerate overnight. In the morning, put 4 or 5 foil balls in the bottom of the crock to hold the chicken up out of its juices (you want it to ROAST, not stew!) (note, I just use the steamer basket that I usually steam veggies in but the foil balls work great too). Place chicken in the crock pot breast side down, and cook on low for 8 hours or so.

Hang on to your poncho people this is a yummy one. Grab some of your favorite tortillas at the market and bring em home to the masses.

Keiths Seasoned Shredded Beef

1 beef shoulder cut (about 4 lbs)
2 medium onions sliced large
1 bell pepper sliced large
2 roasted pablano chillis (skins peeled)
2-3 jalapenos (depending on heat level desired)
note: for jalapenos remove the seeds and the white membrane inside
to keep flavor and lessen heat.
1 large potato diced small
salt
pepper
1 mild taco mix

Combine all ingredients in crockpot and cook for two days on the lowest temprature. Then enjoy it on a nice flour tortilla with lime and cabbage salsa and cheese if desired. You can change it up on the toppings that is what makes this a fun and delicious meal. Enjoy! OLE!

We live in Az and pablano chillis are easy to get roased right at the store. If you cannot they are easy to do at home. Just rub oil on them, any kind you have will do ( i have found olive oil to work well). Then roast them on your outside grill on high watching them closely (lid down). Also if you have a gas stove you can do them over the gas stove flame. Next peel the skin of after they have cooled. If you are having trouble getting the peeling off stick them in a ice water bath. Finally slice them and put them in your crockpot. Do not omit the wonderful pablano chilis they make the dish, Their flavor is so wonderful! Enjoy

We do something called Porcupine Balls
I'm not even sure where the recipe is, I just sort of wing it, so here's my best estimation

1 1/2 lbs Ground Beef
1 cup rice
1/2 cup chopped onion
1 large can of tomato soup (Since we started watching out for added sugar, I substitute spaghetti sauce or tomato sauce for tomato soup.)
salt & pepper to taste

Combine Beef, rice & onion in bowl. Season with salt & pepper. Make into about 1" meatballs. Place in crockpot, cover with soup. cook on low 5 -6 hours (it can get dry, so sometimes I add a little water too). I have one child who doesn't like rice, so I make a few meatballs without rice.


I also do pork chops in sauce. You brown pork chops in a skillet & put them in the crock pot. Then cover them in some sort of sauce. We've used cream of mushroom soup (or other cream soup), golden mushroom soup, barbecue sauce & sweet & sour.

Here's a couple SUPER SIMPLE ones! They are for the small size cooker, so you may have to double or adjust. Meat goes at the bottom - these are cheap and yummy

One small cheap beef roast
2 small bags frozen "stew vegetables"
2 cans cream of whatever you like
2-4 cans water to fill the pot
Cook on low all day

One small cheap pork roast
2 bags sauerkraut
Enough water to cover kraut
Cook on low all day

I don't have recipes right now but last night I made stuffed peppers in the crockpot. They were delicious and that is my favorite thing to smell when I walk in the door after work. I also have a really good sausage and sauerkraut recipe. I will post after work I promise.

Polish sausages and sauerkraut

1 lb sauerkraut, fresh or canned
1 lb lean smoked polish sausage
3 tart cooking apples sliced thin
1/2 C. packed brown sugar
3/4 tsp salt
dash of pepper
1/2 tsp caraway seeds
3/4 C apple juice or cider

Rinse and sqeeze moisture out of sauerkraut. Put 1/2 in crockpot. Cut sausage into 2" pieces and place on top of sauerkraut. Layer the remaining ingredients in order and top with the rest of the sauerkraut. Don't stir. Cook on high for 3-3.5 hours or low for 6-7 hours. Stir and serve.

Stuffed Peppers

6 large green peppers
1lb browned ground beef
1Tbsp minced onion
1 tsp salt
1/8 tsp garlic powder
2 C cooked rice
15 oz. canned tomato sauce
3/4 C shredded mozzarella cheese

Halve peppers and remove seeds. Combine all ingredients except peppers and cheese. Place mixture in pepper halves. Place peppers in crockpot and cook on low for 6-8 hours or high for 3-4 hours. Sprinkle with cheese 30 minutes before serving.

I love to bring the kraut and sausages to potlucks. Although sauerkraut isn't for everyone, those who like it rarely get to eat it and greatly appreciate this recipe. This is one of my husbands favorites. He comes from good German stock!

Chicken Chorizo Tortilla Soup

Throw some cut up chicken breasts probably like 2, 1/4 pound of chorizo (beef chorizo is quite greasy, so I usually use pork), quite a bit of cooked pinto beans with the juice, can of Mexican style tomatoes, onion, few handfulls of crushed tortilla chips, cooked Spanish rice (I've used Rice a Roni before, and it came out OK) or potatoes, cumin, hot sauce in a crockpot....add more stuff and chicken broth to make the crockpot full. Then let it cook for 8ish hours...maybe even less. Serve with cilantro and sour cream and put some more chips on top. This is my kid's and husband's favorite thing I make.

Chicken Taco Filling

6 boneless, skinless chicken breasts
1/3 cup water
1 envelope taco seasoning mix

Place chicken breasts in the crockpot. Mix taco seasoning into water and stir. Pour seasoned water over the chicken breasts. Cook on low about 6 hours.
Shred with a fork and use in your favorite Mexican recipes-tacos, tostadas, burritos, quesadillas.

How much liquid is necessary for a slow cooker not to get too dry over 8 hours?

I've never had a problem with things getting dry even after 8 hours- the crock pot makes quite a bit of moisture in itself.

In keeping with all the Mexican versions, I also do this often:

Skinless bonless Chicken breasts (6?)
1/2 package taco seasoning (about 1/4 cup)
1 cup salsa
1 can cr of mushroom soup

Put the ck breast in bottom of crock, sprinkle with taco seeasoning. Mix salsa and cr. of mushroom soup and pour on top. Cook on low 6 - 8 hours. Can be ready in less time but usually works fine if you leave it all day. My family all love chicken this way. I serve it with rice usually.
