Ummmm..... Let's see. Pasta with a tomato and cheese sauce, french bread, and probably broccoli. I need a dessert of some sort and a protein would be good. My brother is a seasoned eater, so I have to make something filling..... >_<

My concotion that I like to call chicken enchiladas. I couldnt find a recipe I liked so I made it up! It was good!

Last night was baked pork chops, mashed potatoes, carrots, green beans, and apple crisp.

Tonight, going out with friends from college, so restaurant food I guess!

Some chicken something or other that got started last night but never finished.

Last night I had fries from a local pizza place (yum) and some fruit.

I don't know. I was planning on leftovers from last night and there weren't any because we ended up taking it to my SIL's and having dinner there. (She made some stuff too.)

We have some leftover ham from a few nights ago so I'll probably serve it with some homemade macaroni and cheese. It's a dreary, rainy day so that will be nice comfort food!

Hubby went to a Dot foods store yesterday and brought home a huge thing of roast beef. It's cooked and wrapped, but I'm not exactly sure what's on the inside. I'm guessing it's like lunch meat that hasn't been sliced. Anyway, I'm going to open it tonight and make something with it. Then I'll portion off the rest to freeze.

Tonight will be leftovers(chicken enchiladas) its church night so its gotta be quick and easy. Plus, we are horrible about actually eating leftovers so I am trying to get into the habit of actually using leftovers and not wasting food.

DH will have an egg casserole for his low carb diet. I will make it up and leave it in the fridge for him to cook while we are at AWANA.

Not sure about the kids and I. I might make egg casserole too and let them have mac and cheese or something with carbs that we don't eat with dh anymore.

calzones...and salad...or corn...or something... Kids won't eat calzones, but will eat pizza??? So I'll have to fix pizza or something else for them...

Sure-sorry if its somewhat rough, it was a makeup as I go thing.

1 Can cooked chicken (or any chicken you have). Add: 1 can Rotel, Shredded-Co Jack cheese, a "big dollop" of sour cream-enough to make it all gooey.

Mix: 1 can cream of chicken soup and about a cup of sour cream. I added a little crushed red pepper flakes for heat, some onion powder and garlic powder.

Roll chicken mixture up in flour tortillas. Place in greased pan. Pour Sour Cream mixture over the top to cover. Top with shredded co-jack cheese and sliced black olives. Baked until heated through and melty!

Sorry the recipe isnt better. I also do a similar thing in a casserole, just tear up the tortillas in bits, and mix all together and top with cheese. Its one of our favorite meals!

I make up recipes, too. If I have a general idea of taste, consistency and ingredients, I just go for it.

I have had enough enchiladas to be able to recreate it from your instructions. Thanks!!

How do you make the calzones?

Tonight was homemade chicken nuggets with asparagus. Does anyone have a mixture or method for homemade chicken breading (not shake n'bake) that actually sticks to the chicken when you fry it?? I usually do blended up cheese-its with cornmeal and some spices, but it has a tendency to not stick to the chicken when it is frying.
