Kimmie,

What was in your rub mix? I use one that a friend of mine gave me the recipe for: Chili powder, Garlic powder, Onion powder, Salt, and Black pepper. It depends on whether or not you're wanting to make enough for what you're cooking at the time, or keep it around for future use. I've made up a batch to keep and put it in a Zip-Loc bag. For this batch, I used 2 tsp. of everything excpet the salt; that's only a tblsp. BTW, if you want something absolutely mouth-watering, try using this rub mix on some chicken thighs (boneless/skinless) or breasts (same), then place the pieces on a baking sheet, drizzle some olive oil over the bird, and then bake it. For an side dish, take some of the drippings from the chicken, as well as some cut-up meat, put it in a casserole dish, add in some white rice and Cream of Chicken w/Mushroom soup, then put in the microwave and nuke it until it begins to bubble. That means it's done and "scarfin' time is here!!" YUUUUUUUUUUMMMMMMMMMMM!!!!!!!!

The rub mix is great on any kind of meat, and is suitable for baking, frying, or grilling - especially grilling.

In my experience, nice clothing in plus sizes sell well. Let me share a link to my recently completed auctions so you can see what sold and what didn't. Only one of the items is something I ever wore, the rest are items I picked up at thrift stores with the plan to sell them on ebay.

Duane, I'm a novice when it comes to making rubs, so I did a google search for recipes and combined them to come up with one of my own. I didn't use anything hot because I don't like spicy heat. Here are the ingredients and close amounts of each for two roast chickens:

8 teaspoons salt
4 teaspoons garlic powder
3 teaspoons poultry seasoning
...I used poultry seasoning because I didn't have thyme and rosemary alone)
2 teaspoons paprika
1 teaspoon powdered onion
1 teaspoon black pepper
1/2 teaspoon sage

I rubbed the chicken with olive oil and then with this spice rub, then while it was roasting I basted it, and in the last hour I added a couple of pats of butter to the top of the chicken. For liquid I used the last of a small bottle of white wine and two small containers of turkey broth (I was out of chicken broth). Inside the cavity of the chicken I stuffed a 1/4 wedge of onion and some fresh rosemary and basil.

I found that thread you mentioned, Mike...interesting. I'm all for humane treatment of animals destined for slaughter, but don't ever ask me to pluck a chicken...it sounds like a nasty job! I wonder if it's ever been done on the show "Dirty Jobs"...

It has to do with raising ducks and intentionally over-feeding them for the express purpose of fattening their livers . . . of which such fattened liver is considered a delicacy.

Kimmie, the chili powder is counteracted by the remainder of the ingredients in my mix. Besides, if Mary, who also doesn't do 'hot stuff', can eat this mixture, then you can too. Btw, your recipe sounds delicious. I'll have to give it a try.

I'll give that a try with one of the next chckens I roast, Duane :) Let me know what you think of mine when you do try it, I'm curious.

I'm off to run some errands, and I just emailed my resume for an administrative assistant position that sounds like something I could do well. We'll see if they call to set up an interview, they're looking to hire someone immediately.

I'm back from errands, and I got a call from one of my temp agencies for a long term, possible temp to hire assignment with a major company here in Sacramento doing data entry in their accounting department. I need to go in tomorrow for a drug test and to fill out paperwork for a criminal background check as well as a credit check.

The company has consistently ranked on Fortune Magazine's top 100 best companies to work for in the USA.

I'm glad to be considered for this position, at least it'll get me working even if it doesn't go permanent :)

Dead, thankfully Cleaned, plucked, and ready to season and roast...my kind of chicken!

LOL!!!! Yep, they don't know that I axed the axes :D

We had a very fun day yesterday. We went to Granzella's in the small town of Williams north of Sacramento to take my mom and stepdad out to dinner. It was for my mom's birthday. Granzella's burned down late last year and just reopened about a week ago. It's my mom's favorite restaurant. We all had steak (well, Andrew had a huge plate of beef ribs) for dinner, and then went back to their house for a very enjoyable few hours just visiting.

I am eagerly waiting for the last episode of The Next Food Network Star to air at 7pm tonight...I want to see who wins! The judges didn't eliminate someone last week, so 3 people are competing for the prize of their own Food Network show. It's an open field, I have no idea who will win, but I'd be happy with any of them winning.

Yup, we wandered that before going to the dining section. They have quite an array of products as well as some very yummy looking baked goods and some gelato as well.

It's a fun place to visit, and the food is very good.

Yes, it was :)

We also gave her a 'relaxation kit' - a basket filled with two books, a jazz CD, lavender vanilla bubble bath soap petals, foot scrub and lotion, lavender white tea scented soap, a box of earl gray lavender tea, a scrubby, candles and a couple of other things I can't recall at the moment that she loved. I put it all together with things I found here and there over the last couple of months.
