Tonight is breakfast -- bacon, eggs, whole wheat pancakes. Something quick and easy with no leftovers since we're going out of town. We'll be eating out in Branson the rest of the weekend. Can't wait till tomorrow night's dinner, we're going to see the Dixie Stampede show! I hear the food is good!

I use this one:

1 c. flour
3 tsp. baking powder
1/2 tsp. salt
1 tbsp. sugar
dash of cinnamon
2 tbsp. butter, melted
1 egg, beaten
1/2 tsp. vanilla
3/4-1 c. milk

Mix dry, then add butter, egg, vanilla. Add milk until desired consistency (sometimes at 3/4 cup, the batter is a little too thick, so I add just a tad more, but not so much that it's too runny).

Sounds good, I have a similar recipe with whole wheat flour and a bit of oatmeal, we like them quite well too. I never thought to add vanilla before!

Texas Roadhouse - YUM! I can't remember the last time I went to a steakhouse. It was definitely before I was married, making it at least 2.5 years ago!

Anyway...

Tonight is probably a burger joint. We have the Ascension Day service to go to tonight (yippee ) and hubby won't have time for supper beforehand. So we'll probably eat about 8:30 pm.

Well, last night I made a new dish, a nice butternut squash bisque. I used the crockpot, and it was so simple and tasty (healthy too).

1 butternut squash (2lbs) peeled and cubed
1 medium onion, chopped (about 1/2 cup)
1 can ready to serve chicken broth (14 1/2 ounces)
2 cups applesauce
1/2 teaspoon ground ginger

1 cup sour cream

Put in everything except sour cream, set the crockpot to low for 8-10 hours or high for 3-5 hours. If you have a stick blender, then just stick in the crockpot to blend, or transfer at least half to a regular blender and mix till smooth.

I put in the stick blender and mixed the whole thing, but the "official" recipe says to only blend half. A stick blender isn't the same as a hand mixer, but it's a worthwhile kitchen tool.

After that mix in sour cream. If need be heat a bit more till soup is hot (but I didn't need to, it was plenty hot even after mixing in the sour cream). If you like, garnish with a dollop of sour cream, but I didn't bother with that.

I also used low fat sour cream to reduce fat content, but that's a personal choice. The soup is also good cold, but I prefer hot.

If you're a WOH lady, then I'd suggest breaking down the squash the night before and keeping it in the fridge. Peeling and cubing the squash was the only step that took any time.

Shepherd's Pie makes me happy, too. It's a "childhood" recipe. When I married, the women of my family assembled and gave me their favorite recipes. One of my mom's was her shepherd's pie recipe.

Thursday: has a most excellent cheeseburger from In-N-Out. Also went to Starbucks for a carmel macchiato. Settled two cravings at once.

Tonight is dinner at a friends house. and we will have crockpot gumbo, crusty bread, and bananas foster.
