We did go out to eat last night - got to the restaurant around 8:15 or so.

I had shrimp and sole. I discovered that I don't like sole. It's quite the strong fish, isn't it? But I DID eat it all.

Went to the Olive Garden for Mother's Day lunch today - hmmm, good.

We went to pizza hut last night and tonight I am trying a new recipie. Bacon cheeseburger pasta. We are going ot the outlaws so I will cook it there... maybe I will bake a pie too..

Wow, this thread made it to page two... we can't let it die now!!!

Tonight hubby is grilling Italian sausages and corn on the cob for dinner, the weather is finally nice enough to break out the grill and we are taking full advantage!!!

You just brown up taco meat (season it however you usually do for tacos) and add a can of kidney beans (this is optional). Put the meat mixture in the bottom of a pie plate or square casserole dish (mine is 8x8). Then you can add other things if you want (a can of sliced olives, chilis or jalapenos, etc).

Then you top it with "bisquick" mix (I use 1 cup flour, 1 1/2 tsp baking powder, 1/4 tsp salt, 2 TB shortening mixed with 1/4 cup milk and 3 eggs). Bake in a 400 oven for 25 minutes, take out of the oven and top with a sliced tomato and 1 cup cheddar cheese and return to oven for 10 minutes.

Serve with more tomato, lettuce, salsa, sour cream...whatever taco toppings you like.

How do you bread chicken fingers so that all of the breading doesn't come off when you fry them?

This was the first time I tried battering them and it worked well. I kind of combined a couple recipes I found. i started by boiling the chicken for a few minutes till they were almost done. Then I rolled them in flour: just enough to dry them off and help the batter stick and then dipped them in this recipe:

1/2 cup oil
1 cup flour
1 egg
1/2 cup of milk. I added more milk though because it was too thick. I also added some salt, pepper, and poultry seasoning. mix that all together. Oh, I also added a little baknig powder because some recipes use it to make it a little puffier

After the flour layer dip in the batter and let extra drip off. I fried in hot oil for about 5 mins a side since the chicken was mostly done. The batter stayed on pretty well. The first one it was kind of thick so it spread when I put it in the oil but didn't come off

I know you didnt ask me.. but I think it has something to do with putting them in hot grease/oil. If you put it in too cool of grease/oil it wont adhere as well. This is what my mom says anywho .. lol..
