I really enjoyed the discussions about what everyone has every day for lunch...it helps me have more variety in our daily menu....so I am reviving this old discussion with a new thread ready for everyone to fill up with what they eat for lunch every day.....can't wait!!!!

Usually, in the summer I have a veggie sandwich with pepper jack cheese(on pita bread) and a sliced apple or some grapes, and iced tea.

In then winter, I almost always have some homemade soup of some kind in the fridge, (corn chowder being my absolute favorite) so that's what I eat all winter.

Today I had leftover noodles with parm. cheese, butter, and sour cream(BAD for the arteries) and a couple glasses of water.

Today I had a tea biscuit with cheese, an apple and an oatmeal chocolate square.

Some dill pickles, and a bite of cookie dough. I know, bad for me. I had butter & eggs that had been out getting room temp & I had to make the dough before they soured. I didn't have time to eat anything after that!

The county 4-H kids were having their annual BBQ lunch fundraiser so it was; BBQ chicken, cole slaw, baked beans, a roll, chocolate cupcake, and water!

Today it was leftover beefy rice for hubby, revived with BBQ sauce and put inside tortilla shells. For me it was leftover pizza.

Yesterday I was at my mom's so I had my favorite fried chicken chunks and potato wedges from Larry's Fried Chicken down the street from her house. MMMMM!! No one in the world has potato wedges like that. They fry them in batter just like the chicken and it's awesome. And not to mention OH so healthy. LOL!! [8D]

Today I'll probably have tuna or a fresh brown egg over medium with a sliced tomato from the garden.

Today I'm having leftover spaghetti from last night's dinner. Yum! I think I actually like spaghetti better the second day.

it's not lunch time yet, but I think I will go to the kitchen and make some tortillas so I can make some chips for lunch...the kids love nachos with all sorts of good fixings!!!!

i usually fry them...don't know how to get them to turn out right to bake them...any tips?
we changed the menu though....kids wanted something different...so we had....
sandwiches, apples, and cottage cheese with tomatoes and a bit of salt and pepper in it (YUM!!!)...and water

Oh, I love homemade tortilla chips! They go great with pineapple salsa. Now I'm hungry for lunch and it's only 10:30!

I've baked them a few times. I put then in a single layer on a foil lined cookie sheet(the foil helps them crisp better), and brush them with a little oil and make sure the oven is already hot when I put them in. Sometimes I put them under the broiler for a minute if they don't seem crisp enough, but they will burn fast if you aren't watching them. I like the texture a better fried, but less fat in them when I bake them.

I went to the grocery store after a meeting because it was on the way, and I picked up a few things for dinner. But I had it for lunch instead because it was so quick: Lemon and Rosemary Salmon. Mmmmm! It was wonderful!

Today was leftover spaghetti for me. And a turkey sandwich for hubby with bugles on the side. Water for both. Finishing it off by snacking on dark chocolate M&M's this afternoon.

i haven't had much luck with baking them...so that's why I fry them. We hardly ever fryu anything...as a matter of fact I have a deep oil fryer only for chips and two other thing we occasionally fry (chicken dipped in a pancake batter that hubby likes once a year when the super bowl is on...and fried apples with a batter, dipped and fried....that's more of a carnival type treat). Anyway...we don't really fry too often so I don't mind that it might not be as healthy as baked chips. We only do chips on occasion too...well, we have spurts...we might do them three or four times one month then not do them again for three months.

Mmm, Greek Salad sounds yummy.

I don't know what I'm having for lunch, probably more leftovers.
