I've had some very good blackberry cobbler. It's obvious to me that God designed blackberries expressly for that purpose.

Wow, I had to search for this thread in order to post.

I just came across an ad for Taste of Homes Cooking for 2 Magazine(it is put out 4 times a year, but has over 70 recipes). I love the regular taste of Home magazine. I just thought someone may be interested. I get alot of my recipes from there and Cooking Light.

One of my sisters and my mother both get the Cooking for Two magazine. It's easier to subscribe than looking around for it when it DOES come out, lol.

I generally cook for 1 1/2 to three, these days. Depends on my appetite and who's home.

Sharon-Marie ~ I found the recipe (well I kinda knew where it was but hadn't got round to checking if it was there ) for barley bread...

Makes 1 flat loaf (it's a dense loaf, rather like rye/pumpernickel bread, but very light in colour) ~ 16 slices

400g barley
500ml buttermilk
250g barley flour
1 teaspoon baking powder
1 teaspoon salt

Combine pearl barley and buttermilk. Cover and leave to soak overnight. Preheat oven to 180C. Oil and flour a cast iron frying pan (I use a silicon loaf tin because I don't have any cast iron stuff).

Add 250ml water to the buttermilk/barley mix. Blend in until barley is well pulverised (won't be a smooth puree).

Return to bowl and add remaining ingredients. Spoon into pan and bake for approx 1 hour.

I confess that I have got really impatient for people to try something I suggest out, but I'm getting better (though I would love to know what you think).

I've made it with yogurt too. I'm going to make it tonight/tomorrow, using milk/lemon juice to make buttermilk because I couldn't get any buttermilk today.

Well, first I hafta get the barley and buttermilk.

Then, I hafta get a bread loaf pan . . .

. . . although I'm considering using either a muffin pan or my pan that I bake brownies in (which is actually a small roasting pan; perfect size for meatloaf, btw).

Sharon-Marie, the first time I made it, I used an oval pyrex dish and it worked pretty well.

I think I put some mix in a couple of muffin tray holes, and I think it worked, if I remember, I'll try that again tomorrow and let you know.

And the barley flour is just barley (my mother keeps telling me that the barley flour she gets has wheat and other grains in it too and this is all you can get, but she's wrong!)...

In honor of these meh chicken salad sandwiches that were left for us from a funeral yesterday, I must give a better recipe:

Chicken (i use the canned chicken)
Mayo/miracle whip
sliced almonds
grapes, chopped into little pieces.

mix and serve on good bread. croissants are best.

(i know beggars can't be choosers, right?)

I think I am going to try this too. I just wanted to let you know SharMar that you can get powdered buttermilk that you can keep in the frig. and mix as needed. The brand is Saco and it is in the baking section.

Hey, just had to say, I made big mac's at home for the first time today! Yum! And they're perfect because you can make the patties and freeze them for later, and make the special sauce and keep it in the refrigerator for a while so they're easy to put together for dinner. Yummmmm! Oh, and because the patties are fresh and without preservatives and can be baked instead of fried, they're better for you.

I canned some more strawberry syrup a few weeks ago and it's super yummy with pancakes. Ice cream too.

I've been wanting to can some soup for a little healthier quick-fix meal. When I do cook, I try to make enough for leftovers.

People...shame on me but as much adventurous Iam and not timid to buy the biggest bunch of greens there is...I never came across to bring leeks to home with me, I look and look and nada...how do you enjoy using leeks in your recipes ?


I use leeks in an awesome potato and leek soup. I dice the potatoes and cut the leeks (white part) and cook together. I'd have to look at the recipe to remember the rest. Puree until smooth. I know I add sour cream and shredded cheddar also. It's really good.

I freeze butter all the time. I typically have a couple pounds in the freezer at any given time. I mostly use it for baking, cookies in particular, as I make tons of them during Christmas.

As a single guy (though soon not to be), I love cooking with my slow cooker. This evening for example, mid morning I put some beef ribs into my slow cooker. I put in one bottle of beer, topped it off with enough water to cover them, put in spices and then I started cooking them. Five hours on low, and then three hours on high. They were so tender, I didn't need to cut them with a knife! Though, when I was cutting them up for my upcoming meals at work, I did use one of my German cutting knives. But, that's mainly to make sure I get the sized pieces that I want. Though, I admit, it was more 'half cut, half pull apart!'

What I normally do for my meals at work (at the prison), is to make a number of salads up ahead of time. Usually, I try to make at least three up before the beginning of my work week. Chef salad, really. I buy a couple different kinds of salad in a bag (the dark, leafy kinds), cook some meat (usually some chicken and some beef), and have small containers of shredded cheese and salad dressing. That way, before I have to go to work, all I have to do is pack them into my insulated 'lunch box.' In the top, separate part, I have an apple, an orange and some sort of chips or snack mix. I also have a couple of drinks (low or no calorie drink mix kind) and then a desert of pudding (again, I have a variety).

My fiance' introduced me to spice mills of different types. Now, when I use spices, I grind out what I want (measuring my sight/instincts, no measuring) instead of using the pre-ground stuff.
