If God is omnipotent, then why must he sacrifice Jesus to forgive us from our sins? If he is capable of anything, would he not be capable of forgiveness without that sacrifice?

First of all, God is omipotent, His guidelines say there is no forgiveness of sins w/o the sheding of blood. If he had no requirement He would cease to be Holy. He will not do anything against His characer.
