Kerr: Press meat was the same as souse meat.
Several years ago, my mom had a 5 x 7 b&w photo of my grandparents old home. I worked with a black fellow that had a brother that painted pictures. I asked him if he could paint the old homeplace. He could and did. He took the old photo and painted a 36x48 picture. The old well shed and smokehouse was in the photo as well as the homeplace. The fellow was so complete in the painting that he painted barbs on the wire fence and miseltoe in the trees. It was a winter photo. The picture is hanging mom & dads room at the nursing home now. Wouldn't take anything for it. I have some furnitues from my greatgrandmothers home as well as some tools and a pea planter from back then. (late 1800's)

That is so neat. I wish I'd had something that was my great grandparents. Oh wait. I guess I do have a coffeetable Bible which was my great grandmother's. I also have my grandma's coffeetable Bible. I already asked my grandma if I could have her Bible when she dies. To me, the value of a product doesn't matter unless it holds an element of sentiment for me. Her Bible would definitely be meaningful as I used to watch her read it each morning. She is one who marks her Bible up so it would be neat to be able to read her notes. Then I think it would be neat if I got some of her records since I used to listen to them when we'd visit but I'm not going to fight over stuff so God will need to work it out if he wants me to have them.

Reading Bobby's posts about hog killings also brought back memories for me. I remember very well the hog butchering events. They were a multi-family deal in our neighborhood. I do not remember that we ever made head-cheese, but I do know others who did, and really liked it. One vivid memory I had was my Grandma, Mom, and Aunt sewing sausage sacks, and the sausage being hung in the sacks to drain before freezing. I also remember the fresh tenderloins. The knowledge of a hog's anatomy served me well when we lived in NC in the 70's. There was a place near Greensboro that specialized in "Pig Pickings". They roasted whole hogs, and the patrons just reached into the roasted hog and picked or pulled out the meat they wanted. I always went for the loin strip.

We always killed hogs too. As Bobby said the only thing that was not used was the squeal. If mama could have figured out a way to fry it that would have been used too. I can't think of any thing colder than rubbing salt on hams when it is freezing outside.

We never had hogs, but we had cattle. We didn't do the butchering, but we always got one "cow" for the freezer when my dad took them to the slaughter house. I'm not sure what happened to some of the parts, but as poor as we were, my mom had standards. There were no tongues, hearts, etc in that freezer.

When they rendered the lard there were also some "cracklin's", and as I remember they were not too bad to eat at the time. I know some of the older guys really liked them.

We had cattle, too, but I do not remember them being butchered on the farm, either. I think they were taken to a local butcher to process.
