We had company over last night. We bbq'd chicken breast and hot dogs for the kids that wanted, brown rice, tossed salad and fruit salad. With homemade reese/kitkat ice cream cake for dessert. Delish!

Dh and I both had Stuffed Bell Peppers. I also had a spinach salad with balsamic vinegar. I hope to finish off the leftover pie.

In typical HisCovenant fashion, I fooled with the recipe for the pie. Of course I couldn't make it totally healthy, but I did amend the ingredients so I didn't have a sugar blow-out!! The pudding was sugar free and fat free and the cool whip was fat free. It was really good!!

I made Mexican cornbread tonight. I add corn to the cornmeal batter, and add a layer of ground meat and lots of cheese in the middle. DS doesn't like jalapenos in it, so DH & I add jalapeno relish or candied jalapenos on top of ours.

We had chicken cordon bleu casserole last night, and broccoli.

Tonight we're going to be horribly unhealthy and have rib patties (frozen kind) and tater tots. And a veggie, just for good measure, lol.
