Last night hubby requested chicken enchiladas...which I obliged since he rarely requests anything and since its my made up recipe and he always tells me how great it is, makes me feel good to make it! Not that my hubby is not nice or anything, but flattery and compliments are few and far between!

Tonight....not sure.

Nope, but that's a good idea. So obvious, yet it didn't come to me!!

We're having BBQ Chicken, squash, and whatever is in the freezer (I'm hoping for pinto beans or blackeyed peas, but I know there is broccoli and green beans to complete the meal if there are no peas. I probably won't look until time to cook. )

Oh yeah! And I used half water and half cream instead of condensed milk, we don't keep that on hand either. I don't know if what I did was an okay substitution but it tasted good to us! Hmm, apparently I didn't follow the recipe quite as close as I thought. It also fed us for 2 dinners and 2 lunches for dh, I love meals like that!


Tonight is crockpot Sweet and Sour Beef.

Tried this sauce for the first time and loved it (DH hates olives, but he's out of town )! Mixed it with lean hamburger and ate it over whole-wheat pasta.

I made hoki two different ways, poached and baked. The baked had garlic butter on it and tasted much better than the poached. Either way, it was too fishy tasting for me. I've never tried hoki before today and don't think I'll ever buy it again.

I hadn't either, but I'd been reading about problems with farm raise Tilapia and wanted to try something different. This fish is also called hake. It has a fatty strip down the center that is supposed to be high in Omega 3's, but it smelled like fish oil capsules. The box said you could remove the strip to help the fish have a milder taste, but it still tasted like fish oil capsules to me.
