Last night (and again for leftovers tonight) we had homemade beef and cheese enchiladas, guacamole with baked chips, and spicy black beans and zucchini on the side.

I cooked Homemade Jack Daniels BBQ Chicken, green beans, and potatoes (sweet for me, white for dh.)

Black bean brownies Ingredients: 1 package of family size brownie mix one can of black beans Drain and rinse black beans in strainer, return beans to clean can and fill can with fresh water (to the top-- you are basically rinsing and replacing all the stagnant, preservative laden black bean 'juice' with water) Empty can into blender, liquefy. Mix with brownie mix and bake according to package. You might want to use Pam to keep brownies from sticking. Add NOTHING else. That's it! The brownies don't rise exactly the same as the egg and oil version, but they are very moist and fudgy. Plus, you have the extra fiber and protein. All my guys liked them, and I think they're better than recipes that replace the oil with pumpkin or applesauce. quote:

Ohhh, so it's using a boxed mix. Hmmm. I have this WONDERFUL recipe for brownies - butter, flour, cocoa, sugar, I think 4 eggs, and chocolate chips. Maybe a couple other ingredients. They're SO GOOD but very high in fat and calories, that's for sure! quote:

It is definitely too hot to cook, but I am anyway--it's my DS's 21st birthday and he has requested lasagne, so I am using the oven and we are having lasagne & garlic breadsticks. Tomorrow we should have enough leftovers from the last couple of days so that we can just fix a plate and microwave it!

We had hamburger bean bake, French bread and lettuce salads. The electricity went off after the casserole had been in the oven for about 15 minutes. It's supposed to cook for 60-90 minutes. I left it in the warm oven for the full hour and it was pretty good. At least the ground beef was already cooked and all I was doing was heating it and letting the flavors mingle.
