Is it a sweet butter then? I know it has lemon (which can be sour) but it sounds like it would be a really sweet with so much sugar :)

The batch I made today, to me, tasted a bit tart. The couple I live with though thought it was wonderful! I guess it all depends on your taste buds. I won't turn this into a cooking thread, but here's another recipe that's a bit different. I've made this too. It's very simple. BANANA JAM: Preparation time: 10 minutes Total cooking time: 50 minutes Makes 3 cups (750 mls/24 fl oz) 1 kg (2lb) very ripe bananas (about 7) 100 ml (3 1/2 fl oz lemon juice 3 cups (750g/ 1 1/2 lb) sugar METHOD: 1. Put two small plates in the freezer. Chop the bananas and place in a large pan with the lemon juice and sugar. Bring to the boil and skim and scum with a skimmer or slotted spoon. 2. Cook the jam over medium heat for 30 minutes, then reduce heat and simmer, stirring frequently, for 15-20 minutes, or until jam is thick and pale red in colour. Remove any scum from the surface. 3. Spoon immediately into clean, warm jars and seal. Turn upside down for 2 minutes, then invert and leave to cool. Label and date. Store in a cool, dark place for 6-12 months. Refrigerate after opening for up to 6 weeks. NB: Use old mushy bananas similar to those you would use for a banana cake. While not a true jam, it is just as delicious. Serve as you would other fruit jams. Oh, I forgot to say to you, the sugar that you use for the banana jam, warm it in the oven on a low heat. Just put in on a tray on baking paper evenly on the tray. It takes about 15 minutes. When you test the jam by putting a little on the plates from the freezer, it should push like it's wrinkling.

Hmmmm, well, I think we'll have lunch here before too long. We're all getting hungry (it's just after 11 AM here). I have to get a schedule lined out for my paras (when I hire them) and figure out the schedule for MY room. Other than that, I have no idea...although the zoo & movies have been thrown around.

Yes, I remember...I think I've posted in your thread about reading suggestions as I'm a bookworm too (when I have time). I just finished reading Alaska by Tracie Peterson. You'd probably like it (headstrong women...setting: years ago in Alaska).

Kylie, I hope you're all better too. I've got the sniffles and sore throat/nose etc too. I know mine is mostly hayfever though. I've noticed that my hayfever has just continually worsened as the years have gone on.

Kylie, sorry y'all are sick again. That's never fun. Hope your family gets better VERY soon! Trish--you'll have to check it out. I enjoyed it. The last books I recollect reading before that were The Corrie Bell Hollister (Baxter) novels by Judith Pella/Michael Phillips. They're good reads if you haven't read them before. We went to church this morning...it was great! Anyway, I've got to get a little boy settled in his bed. Later....
