Is it a sweet butter then? I know it has lemon (which can be sour) but it sounds like it would be a really sweet with so much sugar :)

The batch I made today, to me, tasted a bit tart. The couple I live with though thought it was wonderful! I guess it all depends on your taste buds.

I won't turn this into a cooking thread, but here's another recipe that's a bit different. I've made this too. It's very simple.

BANANA JAM:

Preparation time: 10 minutes
Total cooking time: 50 minutes
Makes 3 cups (750 mls/24 fl oz)

1 kg (2lb) very ripe bananas (about 7)
100 ml (3 1/2 fl oz lemon juice
3 cups (750g/ 1 1/2 lb) sugar

METHOD:

1. Put two small plates in the freezer. Chop the bananas and place in a large pan with the lemon juice and sugar. Bring to the boil and skim and scum with a skimmer or slotted spoon.

2. Cook the jam over medium heat for 30 minutes, then reduce heat and simmer, stirring frequently, for 15-20 minutes, or until jam is thick and pale red in colour. Remove any scum from the surface.

3. Spoon immediately into clean, warm jars and seal. Turn upside down for 2 minutes, then invert and leave to cool. Label and date. Store in a cool, dark place for 6-12 months. Refrigerate after opening for up to 6 weeks.

NB:

Use old mushy bananas similar to those you would use for a banana cake. While not a true jam, it is just as delicious. Serve as you would other fruit jams.

Oh, I forgot to say to you, the sugar that you use for the banana jam, warm it in the oven on a low heat. Just put in on a tray on baking paper evenly on the tray. It takes about 15 minutes.

When you test the jam by putting a little on the plates from the freezer, it should push like it's wrinkling.

Well, it's something a bit different for you to try. If you like them, you could maybe use them as easy Christmas gifts.

What are you planning on doing for the rest of the day?

I'm going to be heading off to bed soon. I've had to take some painkillers after my cooking this afternoon.

Hmmmm, well, I think we'll have lunch here before too long. We're all getting hungry (it's just after 11 AM here).

I have to get a schedule lined out for my paras (when I hire them) and figure out the schedule for MY room. Other than that, I have no idea...although the zoo & movies have been thrown around.

It's just after midnight here, so I'd definitely better be getting offline in the next couple of minutes.

I'll talk to you later. It was nice having your company.

Sweet dreams, Trish. Take your time to wind down for the night. Is reading an activity your doctor recommends? Or is that too stimulating?

Thanks Faith.

Yes, reading was something that she suggested, and something I love! (I'm a real book worm!)

Later!

Yes, I remember...I think I've posted in your thread about reading suggestions as I'm a bookworm too (when I have time). I just finished reading Alaska by Tracie Peterson. You'd probably like it (headstrong women...setting: years ago in Alaska).

LEMON BUTTER:

250gr (1/2 lb) butter
4 eggs
500gr (1 lb) sugar
rind of 3 lemons
juice of 4 lemons

Put the butter and sugar in a saucepan, place on fire and stir until clear. Add 4 yolks and 2 whites of eggs, well beaten, juice and grated rind of lemons, and stir and cook till like honey.

Oh good. Another recipe I can share with my friend. I sure do hope SHE shares.

Trish, it's been a little crazy here too. Our liquid amber has finally lost all its leaves. Our leopard tree is yet to start losing its leaves.

We have new mattresses for J and X. They've been a long time coming. And dh decided to spoil them an buy them each their own electric blanket.

Tracie Peterson is an author I like. I don't think I saw "Alaska" in the Christian bookstore the other day. Oh well, I go over there in just over 5 weeks when I go back to the rhematologist. They're about a block apart. LOL!

Diva, glad you've got a recipe to share with your friends.

As much as I like being warm in winter, I've got a real aversion to electric blankets. When I was 14, our house caught fire because of a fault in the electric blanket. My mother had just got up to go to the bathroom, and came back to find her side of the bed on fire. Ever since then, I've never used one. I'll stick with my hot water bottles, which are getting a fair workout these nights.

I didn't get to church this morning. I was just about screaming trying to turn over in bed during the night. Was invited to a birthday/anniversary celebration this afternoon, but they will be celebrating without me. Just going to take things easy today.

(((Trish)))

We didn't make church this morning either. We did go over to a friend's for his birthday breakfast and then dh stayed on to help with some work on his bathroom ceiling.

We wouldn't have been going to church anyway as J and X are both ill and I think I'm starting to get sick too (just a tingly throat so far and I hope that's all it is - J and X have had a week off school).

We only went to our friend's this morning as his kids are sick too, so nobody was giving anyone anything.

Kylie, I hope you're all better too.

I've got the sniffles and sore throat/nose etc too. I know mine is mostly hayfever though. I've noticed that my hayfever has just continually worsened as the years have gone on.

Just a virus, but there's a particularly nasty one going around right now.

I called up the school on Friday to see if I could pick up X's assignment, because she was getting upset about it being due on Monday and not being able to work on it, and her teacher said not to worry as they've had so many away sick that they've extended the due date for everyone.

We popped out to get some butter chicken for dinner tonight. I just couldn't face cooking.

Dh has been back since Saturday morning. He's sick too. J and X are staying home from school again today.

I haven't reminded J that it's Monday (his special mechanics class is on Monday and they're supposed to bring their bikes home today). I figure we'll jump that hurdle when we come to it, but right now he doesn't need to be stressing while he's sick.

Ah well, there's always an up side. I don't have to drive past my turn off for work to drop kids at school today. I can drive staight there.

Kylie, sorry y'all are sick again. That's never fun. Hope your family gets better VERY soon!

Trish--you'll have to check it out. I enjoyed it. The last books I recollect reading before that were The Corrie Bell Hollister (Baxter) novels by Judith Pella/Michael Phillips. They're good reads if you haven't read them before.

We went to church this morning...it was great!

Anyway, I've got to get a little boy settled in his bed.

Later....

I'm so not tired. We have a lot of work to do tomorrow. So here I thought I'd read some forums, but hubby is amusing himself with listening to the Jerkey Boys. (granted some of them have given me a good laugh)
