LOL, yes kitty is getting to enjoy Thanksgiving too, that's great. I also think it's great to be doing the traditional dinner for yourself! Last year I pretty much did that too. My "plans" fell through the day before so I made a quick trip to the grocery store and bought a small, already stuffed turkey, mashed some tatoes and bought cranberry sauce... had my own dinner all set. It turned out a friend was at loose ends in the afternoon after visiting her Dad at the nursing home, so she came and had dinner with me, but even if she had not been able to make it, I would have had the traditional dinner. This year, I think the whole family will be at my place. LOL, from one extreme to the other!

Thanksgiving will be interesting. It's also DS's bday. He doesn't particularly like turkey so I will be making him cheesesteaks for lunch as well as preparing turkey dinner for later that day. My parents will be coming over.

Cool about the traditional meal. We're not doing that - Kevin's family has never been into Thanksgiving meals. (When he was younger, his family would go camping this weekend, so no big, traditional meal. His parents still go camping this weekend when they're in town.)

We had a soup and sandwich lunch at the church after the Thanksgiving Day service. I'm not sure what we're having for supper.

An other Canadian, we had Thanksgiving dinner yesterday because it works better for some of our grandchildren and children, so tonight we had left over turkey, potatoes, gravy, turnip, glazed carrots, cranberry sauce, and pie with ice cream, it was as good today as it was yesterday.

Tonight I am fixing sweet potato and black bean burritos. I found the recipe on a blog and then discovered the blogger had adapted it from the Moosewood Restaurant Low-Fat Favorites cookbook which I just happened to buy at a thrift store some time ago.

It's in the oven right now, I'll let y'all know how it came out later this evening. I can tell you that the filling is very tasty, though

Someone once posted a recipe for easy chicken enchiladas using sour cream, cream of chicken soup, rotel, cheese, chicken, and shells. Would they mind reposting it (or giving me a link) I couldn't find it.

Idyllic Dreams Version of Sweet Potato and Black Bean Burritos
Adapted From the Moosewood Restaurant Low Fat Favorites Cookbook, page 172
(The official ingredient list is below the recipe. I made some changes based on my preferences, most notably leaving out the cilantro because I despise everything about it, from its taste to the smell to the fact that it’s masquerading as parsley. Bleah!)

5 cups peeled cubed sweet potatoes (I used one Jersey sweet potato and 3 garnet yams)
1/2 teaspoon salt
2 teaspoons olive oil
3 1/2 cups diced onions
2 teaspoons crushed garlic
2 tablespoons mild canned diced green chiles
3 teaspoons ground coriander
3 teaspoons ground cumin
3-15 oz cans, drained and rinsed
2 tablespoons fresh lemon juice
1 teaspoon salt
8 Ezekiel 4:9 sprouted grain tortillas

Preheat the oven to 350°

Place the sweet potatoes in a medium saucepan with the salt and water to cover. Cover and bring to a boil, then simmer until tender, about 10 minutes. Drain and set aside.

While the sweet potatoes are cooking, warm the oil in a medium skillet (I always use cast iron) and add the onions, garlic and chile. Cover and cook on medium-low heat, stirring occasionally, until the onions are tender, about 7 minutes. Add the cumin and coriander and cook for 2 to 3 minutes longer, stirring frequently. Remove from heat and set aside.

Combine the black beans, lemon juice, salt, and cooked sweet potatoes in a bowl and hand mash with a potato masher (this makes a nicely textured filling. The Moosewood cookbook suggests pureeing the ingredients in a food processor until they’re smooth, but I prefer the texture of hand mashing). Mix in the cooked onion and spices.

Lightly oil a large (13×9) baking dish. Spoon about 2/3 to 3/4 cup of the filling in the center of each tortilla (I warmed each tortilla in the microwave before filling to ensure easier folding and to avoid tearing), roll it up and place it, seam side down, in the baking dish. Cover tightly with foil and bake for about 30 minutes, until piping hot. Serve topped with salsa.

I added a blend of shredded Mexican cheese and some black olives to the top.

These are very good! DSH likes them, too :)

The Official Moosewood Restaurant Low Fat Cookbook Sweet Potato and Black Bean Burritos Ingredient List

5 cups peeled cubed sweet potatoes
1/2 teaspoon salt
2 teaspoons canola or other vegetable oil
3 1/2 cups diced onions
4 large garlic cloves, minced or pressed
1 tablespoon minced fresh green chile
4 teaspoons ground coriander
4 teaspoons ground cumin
4 1/2 cups cooked black beans (three 15 oz cans, drained)
2/3 cup lightly packed cilantro leaves
2 tablespoons fresh lemon juice
1 teaspoon salt
8 flour tortillas
